Tortitas Saludables de plátano y avena

For those who follow me on Instagram it’s not a secret that I’m trying to get fit and that means eating healthy (which I was already doing) and more (that’s the hardest part). One of my favourite new breakfasts are these healthy pancakes. The secret to get them healthy is to avoid sugar (the banana will give them flavour and sweetness) and choose the toppings carefully.

I use to make them quite small so I can have a complete breakfast with a lot of nutrients so I take a couple of pancakes (normally without toppings) a whole wheat rye toast with low fat cheese and a coffee with a dash of skim milk.

In case I want to add toppings, I use to pick peanut butter and I’m completely in love with Whole Earth one. I promise you they don’t give me anything in Exchange of saying that but it so good that I feel I should tell you. And it’s eco!

(English) Banana & Oat Pancakes

Ingredients

  • 1 large egg
  • 3 tbsps. Oat flour
  • 1 medium banana
  • 50 milliliters coconut drink
  • Coconut Oil or Soft Olive Oil
  • Unsalted and unsweetened peanut butter
  • Fruit

Instructions

  1. Cut the banana and smash it well.
  2. Add the oat flour, the egg and the coconut drink and mix.
  3. Spread some oil into a frying pan and pour around two tablespoons of batter in it.
  4. Cook both sides of the pancakes and serve with a teaspoon of peanut butter and some raspberries or a fruit of your own choice.

  1. Yo estoy igual, tengo que ganas músculo porque me hace mucha falta, y también me irá bien para los huesos que los tengo flojillos…
    las tortitas con avena y plátano me chiflan! Qué bien te quedan, perfectísimas :).
    Y yo también recomiendo mucho esa mantequilla de cacahuete, desde que la descubrí no pruebo otra, deliciosísima.
