If you know me a little, you should know that I love spinach. I can eat the everywhere: salad, main dish, as a side… And my favourite ones are baby spinach. I use to enjoy them mixed with some lettuce in my salads but this time I’m making a salad where they are the only and one lead character.
I have to be honest and tell you that I made this salad because I had some strawberries in the fridge and they were going bad so I needed to make something with them and half went to the salad and the other half to a yogurt I took as a dessert.
I also enjoy to add some nuts to the dish so it’s more complete and you add an important source of healthy fats that will keep you full for longer but if you don’t fancy them you can use some seeds.
