Merluza al horno con salsa de coco y guarnición de champiñones rellenos

If fish is not your favourite ingredient or it bores you, this is your recipe. And I can tell you so because I use to get bored easily of meat and fish if they are not cooked in a different way or with an special touch as it seems the same meal everyday.

I will use the oven for this recipe and the hake has to be just a little bit inside, as we don’t want it to get dry. The mushrooms, nevertheless, should be inside the oven so the best things you can bake them in a different pan so you can leave them inside once you have taken the fish out the oven.

It goes without saying that you should use a good Spanish Ham to get the best results. I know outside Spain is quite hard to find it, but do your best or use bacon instead. I’m very lucky that my mum is from a small village in Cáceres so I always have at home really good Iberian ham.

Finally, I have used hake but I0m pretty sure the recipe goes fine with any kind of fish. The sauce is soft and don’t be afraid of spices as they don’t taste strong and I’m sure you’ll like it.

(English) Baked Hake with coconut sauce and filled mushrooms side

  • Serves: 2
  • Level: 2 filets

Ingredients

  • 2 hake filets
  • Spanish Ham
  • 12 -14 Portobello Mushrooms
  • 1 Garlic clove
  • Fresh Coriander
  • 1/3 tsp. Amchoor
  • ½ tsp. ginger
  • 150 milliliters coconut milk
  • Pepper
  • Salt
  • Olive Oil

Instructions

  1. Put the coconut milk into a saucepan and add ginger, amchoor and chopped coriander. Bring to boil, take off the heat and reserve.
  2. Putt he hake into an oven pan and add salt and pepper to taste and the garlic clove sliced.
  3. Wet the hake with the sauce.
  4. Heat oven to 200º and bake for 15 minutes
  5. Remove the stem of the mushrooms and put them into another oven pan.
  6. Add some salt and fill with Spanish ham (chopped).
  7. Add some olive oil on top and bake for 30-35 minutes (200º)
