Foglie d’ulivo (or olive-tree leaves in English) are a type of pasta that receives its name from the resemblance with the leaf of that tree. The green colour does not come from artificial colouring but from spinaches but the flavour remains the same (do not worry, veggie haters).
Today’s recipe is simple but I love it because it’s not the typical tomato sauce o Carbonara sauce pasta.
The best of the flavour comes from the butter but if you want something healthier, try olive oil. If you use butter, make sure to use a good one or the results won’t be the same.
As an extra, you can add a dash of chilli olive oil. I don’t like grated cheese with that kind of pasta, but that’s up to you.

It was the first time I saw that kind of pasta too. It’s so Mediterranean! And delicious! I wish you could find it there and try it because it’s one of the best pastas ever.
