Taking advantage of the vegan tzatziki hummus I made for Monday’s recipe, I wanted to make a veggie sandwich with it. It’s a recipe 100% vegan and the hummus gives it a really interesting touch and the bread remains fresh. And for those who are carnivores (as me) don’t you worry because you won’t miss meat with this sandwich.
The sandwich indeed has 3 bread slices. However, I have just spread hummus all over one of them as I wanted to add to mine a little bit of mustard so I get a stronger contrast in the flavours. Nevertheless, at home, they don’t really like mustard so the recipe goes without it.
I have also wanted to add some parsnip; a forgotten ingredient that tastes quite good in salads and sandwiches. I have just rolled the slices over flour and grill it. There are so many ways to cook them and you’ll probably see some of that around the blog soon because I’m using it a lot in my kitchen lately.
For those who don’t know, parsnip is a vegetable that looks a lot like a white carrot, with a nested flavour and lots of fiber and vitamins so I’m pretty sure that they will become very popular.
So here we go with the recipe, even tough I feel kind of embarrassed to call make a sandwich a recipe.
