For those who enjoy spoon dishes so much that you can’t stop eating them on summer, I’ve got a recipe for you! This is a carrot, orange and pistachios creamy soup that you can have both cool or warm and it’s perfect as a starter.
I love to add ginger and turmeric to it; not only because I love the flavour but also because it’s so good for my gut heath. Anyway, if you’re not into spices, try just with salt and pepper or even adding a some chopped pistachios before blending the soup.

Ingredients
- 5 small carrots
- carrot broth or vegetable broth
- Juice of 1/2 orange
- Salt
- Ginger
- Turmeric
- Chopped Pistachios to top
Instructions
- Peel the carrots and reserve. Put some waterinto a saucepan and bring it to boil. Then, add the carrots and cook them before they're soft (the time depends on the size of the carrots: 15-20 minutes).
- Once cooked, put them into a blender and add tthe broth until it covers the carrots. Add the orange juice and the spices and blend.
- Serve cool or warm topped with some chopped pistachios and orange zest.
