I have always thought that Bundt Cakes are pretty spectacular cakes. Ok, it’s true that the mould makes most of the trick, but it’s so spongy and irresistible that I can’t say anything bad about them.
It’s possible that you go crazy by trying to achieve the perfect Bundt Cake and I admit that mini it’s not. But, thanks to my experience, I can tell you some things about bundt cake tricks.
There are two things that are pure investment: a good oven and a good mould. My problem for years was the oven that couldn’t spread the heat in a uniform way. Now, I don’t have a perfect mould because they are quite expensive, but I think I get good results given the circumstances.
Then, we have two easy things we can do: prepare the mould with some anti-adherent spray (butter can work but nothing like the spray) and wait for 10 minutes for the cake to cool before unmould.
The thing is that I’m quite proud of my cake, especially of the texture and flavour. Someone bought coconut yogurts and nobody was eating them so I have to make something and… Here we go! A coconut bundt cake, perfect for breakfast, or coffee or teatime or, actually, perfect for every single moment.
