I don’t’ like rice very much; actually, I’m not a fan of grains, excepting oats. But I do love rice pudding and my mom’s recipe is the best one (I will show you some day). The problem is that it’s too slow to make.

When I need a cup of rice pudding and I don0t have the time to make it, I use cous cous and it’s a really good idea with really good results. It’s very fast and the flavour is exactly the same as rice pudding.

I can tell you it’s much better if served warm because cous cous takes all the liquid and you will end up with a paste. Nevertheless, if you need to refrigerate some, just add a dash of milk or cream and warm it up.

(English) Sweet Cous Cous with Aromatised Milk

A version of the traditional Spanish dessert "Arroz con Leche" (or rice pudding).

  • Serves: 4
  • Level: 4 bowls

Ingredients

  • 1 cup of cous cous
  • 2 cups of milk
  • 220 milliliters whipping cream
  • 2 tbsps. Condensed milk
  • 2 tbsps. Sugar
  • 1 cinnamon stick
  • 1 lemon zest
  • Cinnamon to dust

Instructions

  1. Into a saucepan, pour the milk and putt he lemon zest and the cinnamon stick inside. Bring it to a boil and let it aromatised for 5 minutes.
  2. Take it off the heat and add the cous cous. Wait until it’s hydrated.
  3. Take back to the heat and add the whipping cream and the condensed milk. Cook for a couple of minutes (medium heat).
  4. Serve warm with some cinnamon on top.
