Helado de mascarpone y moras

Ice Cream, Ice Cream and more Ice Cream. I can’t stop eating them. I could eat ice cream avery single day of my life and with both hands; I don’t mind if it’s raining or snowing, I always want another ice cream and I love every flavour. Of course, I have my favourites: cheese and berries. I also love salted caramel and lemon pie but, as you may imagine, cheesecake is my favourite.

This recipe is made with both ingredients: cheese (Mascarpone) and blackberries and I can’t understand how could I freeze it before eating all of it.

  • Serves: 4
  • Level: 1l ice-cream


  • 1/2 liter milk
  • 100 grams mascarpone
  • 200 grams crème fraîche
  • 275 grams condensed milk
  • 200 grams blackberries
  • 100 grams sugar


  1. Into a saucepan, putt he blackberries with the sugar and let them reléase the juice until you have syrup.
  2. Take off the heat and let it cool.
  3. Mix mascarpone, crème fraîche and milk. Add condensed milk and stir.
  4. Put the mix into a metal container and cover with plastic wrap.
  5. Freeze for 3 hours, take off the freezer and mix with the blackberry syrup using a spoon.
  6. Freeze again.

    • Hi, Carol! I’m so glad you like it! It really tastes amazing so I encourage you to try it. I normally use the whole berry (seeds included) but if you don’t like it, you can sieve it in order to get rid of the seeds.
