Quesada Pasiega, receta tradicionalA few week ago, I posted the recipe to make sobaos pasiegos, a Spanish traditional dessert from Cantabria. As my aunt Maribel brough me from there enough butter, I also baked a Quesada.

Traditional quesada is made with milk curd but don’t panic because it0s very easy to make and I’ll show you step by step. Of course, if you can make the recipe with butter from Cantabra and fresh eggs the result will be the best.

Quesada Pasiega: Traditional Spanish Recipe

Ingredients

  • 1 liter milk
  • 2 tbsps. quark
  • 4 XL eggs
  • 100 grams butter
  • 250 grams sugar
  • 100 grams flour
  • 1 tbsps. lemon zest (grated)
  • 1 tsp. cinnamon

Instructions

  1. Into a saucepan, heat the milk until boil.
  2. Then, add the quark and stir.
  3. Let it boil again and turn it off.
  4. Let it sit for one hour and the milk should look like it has gone bad.
  5. Sieve it using a kitchen cloth so you can take off the whey.
  6. Reserve.
  7. Into a big bowl, beat the eggs with the sugar.
  8. Add the butter (melted) and mix.
  9. Sieve the flour and add it to the batter.
  10. Add the quark that you got before, the lemon zest and the cinnamon and mix.
  11. Pour into a mould and bake for 10 minutes to 200ºC.
  12. The, low down the heat to 180ºC and bake for 45 minutes.
  13. You can use the grill function of your oven at the end to grill the top of the quesada.
