
If you still think that cookies can’t be healthy and delicious at the same time is, probably, because you haven’t tried mine yet. They even have chocolate chips, I say no more!
The recipe came out because I was craving cookies so badly! and I went to my local store where I know they sell oatmeal cookies but it was a holiday so they were closed. So now, I have my freezer full of oatmeal cookies that I packed and freeze individualy because I kind of now my inner fatty and I know I can eat them in a row.

Ingredients
- 1 cup rolled oats
- 1 tsp. vanilla extract
- 3 tbsps. Coconut sugar
- ¼ cup coconut rice milk
- ¼ cup melted coconut oil
- 1 egg yolk
- 2 egg whites
- Pinch of alt
- ½ tsp. baking powder
- ½ tsp. baking soda
- 1 tsp. cinnamon
- ¼ cup shredded coconut
- ½ cup oat flour
- 60 grams chopped dark chocolate (85% cacao)
Instructions
- Mix dry ingredients together into a big bowl.
- Then, add the egg yolk, egg whites, vanilla extract, milk and melted coconut oil and mix using your hands.
- Add the chocolate add mix carefully.
- Place the batter making balls into an oven pan. Smash the balls so they get a cookie shape because they won’t spread while they’re in the oven.
- Bake for 12-15 minutes at 350F/175C.
- Store I a jar or freeze them!
