Raw Healthy and Vegan Carrot Cake

This carrot cake is so yummy! And if you don’t believe me, you should go and try right now! Ever since I’m a healthy human being and my blog is as healthy as me, I’m making an effort to create delicious recipes for you all so you can be healthy with me but I’m also trying to make healthy versions of the classic recipes to show you that every single dish has a healthy version.

This time I’m giving you the recipe to make an amazing and super healthy carrot cake. I have even transform the icing which is commonly made with cheese because I’m trying not to eat lactose as I’m feeling quite sick when I eat it.

That doesn’t mean dairy is bad for you or unhealthy (not at all), it’s actually very good and just not working for my gut health right now.


Raw Healthy and Vegan Carrot Cake

(English) Raw Carrot Cake

  • Level: 8 bites



  • 100 grams dates
  • 60 grams walnuts
  • 80 grams grated carrots
  • 40 grams melted coconut oil
  • 20 grams coconut flour
  • 2 tbsps. shredded coconut
  • 1 tsp. cinnamon
  • A pinch of ginger
  • A pinch of nutmeg


  • 1 plain soy yogurt (unsweetened)
  • 1 tbsp. honey
  • 1 tbsp. shredded coconut
  • Walnuts to top


  1. To make the cake, place all the ingredients into a blender and mix. You'll get a batter that you should place into a tray or mould (covered with foil). Place the tray into the freezer while you make the icing.
  2. To make the icing, mix soy yogurt with honey and coconut and combine using a spoon.
  3. Take the cake out of the freezer and cut it in pieces.
  4. Top them with some icing and some chopped walnuts.
