Spanish Torrijas with Brioche Bread and Dulce de Leche

  • 1 loaf of brioche bread
  • 1 ,5 l milk
  • 5 tbsps. dulce de leche
  • 150 gramos sugar
  • 3 eggs
  • Sugar to dust
  • Oil for frying


  1. Cut the loaf of bread in slices of 2 cm and put them into a deep pan. Reserve.
  2. Beat the eggs and reserve.
  3. Putt he milk into a big saucepan and add dulce de leche and sugar. Stir and let it boil.
  4. Once it’s boiling, take off the heat and pour it on top of the bread. Let the bread get wet.
  5. Pass the slices of bread to the eggs and cover them with it.
  6. Fry the bread in a frying pan with 4 cm of very hot oil. Let it Brown both sides.
  7. Take off the pan and put some sugar on both sides of the torrija.
