Breakfast is the most important meal of the day and the best one. I do not really enjoy having different options at breakfast as my body demands whole-wheat rye toasts and if I don’t give them to it, it will be starving all day all, no matter what else I eat.

However, as I love breakfast so much, I can definitely eat it several times a day, for example at lunch. This breakfast bowl is the perfect choice for this purpose as it’s super delicious and complete in macronutrients.

In addition, by adding the poppy seeds you’ll feel full for longer so everything’s perfect with this dish.

 

Bol de desayuno salado con calabaza, kale, huevo y aguacate

(English) Savoury Breakfast Bowl: Butternut squas, Kale & Avocado

  • Serves: 2
  • Level: 2 bowls

Ingredients

  • 100 grams butternut squash
  • 50 grams Kale
  • 1 egg
  • ¼ avocado
  • Poppy Seeds
  • Coconut Oil
  • Salt
  • Black Pepper
  • Turmeric
  • Oregano

Instructions

  1. Cut the butternut squash into dices and put it into an oven trail. Add salt and pepper yo taste and spread some coconut oil.
  2. Bake 180º for 120-30 minutes.
  3. Put ½ tsp. Coconut oil into a frying pan and add the kale. Cook until it’s dark green and soft and add turmeric, salt and oregano.
  4. Put the kale and the butternut squash into a bowl and add the avocado (sliced).
  5. Make the egg in the frying pan and without oil and add salt and pepper to taste. Add it to the bowl.
  6. Spread some poppy seeds on top and enjoy!
