Galletas de Avena y Chocolate

If you still think that cookies can’t be healthy and delicious at the same time is, probably, because you haven’t tried mine yet. They even have chocolate chips, I say no more!

The recipe came out because I was craving cookies so badly! and I went to my local store where I know they sell oatmeal cookies but it was a holiday so they were closed. So now, I have my freezer full of oatmeal cookies that I packed and freeze individualy because I kind of now my inner fatty and I know I can eat them in a row.

(English) Chocolate Chip Oatmeal Cookies

Ingredients

  • 1 cup rolled oats
  • ½ cup oat flour
  • ¼ cup shredded coconut
  • 1 tsp. cinnamon
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • Pinch of alt
  • 2 egg whites
  • 1 egg yolk
  • ¼ cup melted coconut oil
  • ¼ cup coconut rice milk
  • 3 tbsps. Coconut sugar
  • 1 tsp. vanilla extract
  • 60 grams chopped dark chocolate (85% cacao)

Instructions

  1. Mix dry ingredients together into a big bowl.
  2. Then, add the egg yolk, egg whites, vanilla extract, milk and melted coconut oil and mix using your hands.
  3. Add the chocolate add mix carefully.
  4. Place the batter making balls into an oven pan. Smash the balls so they get a cookie shape because they won’t spread while they’re in the oven.
  5. Bake for 12-15 minutes at 350F/175C.
  6. Store I a jar or freeze them!
